SUMMERTIME AND THE CRUISIN' IS EASY!
Summer 2010 offers several new "close to home" cruise destinations. |
Holland America is returning to Bermuda for the first time in nearly 10 years. The newly renovated Veendam will be sailing from New York roundtrip for seven days between May and October. Featured will be three days in Bermuda, one in the old city of St George's and two in Hamilton. The Veendam is now sporting new cabin categories - Lanai staterooms offer sliding glass doors opening on the Promenade Deck and Spa staterooms with special spa amenities.
There are two great choices for luxury cruising in Canada / New England for the Fall 2010 season. The Crystal Symphony will be sailing four 11-night cruises in September and October between New York and Montreal. And the Silver Whisper will position to New York on September 14 for three 10-night cruises to and from Montreal.

The Caribbean now has a new premium line choice for the summer of 2010. Celebrity Cruises has the Solstice sailing seven days roundtrip Ft. Lauderdale. This definitely gives cruisers a viable alternative to enjoy such a first class ship during this current season.

Help protect your home by using some of these safety measures before your departure:
- Suspend your newspaper and mail delivery; or have a neighbor collect them for you.
- Don't tell people you are going to be away.
- Set your lights on timers in various rooms to come on and go off at different times.
- Inform a neighbor or friend when you're leaving and returning and ask them to keep an eye out for anything suspicious. Be sure to leave them a contact phone number in the event of an emergency.

For The Foodie .......

Shrimp Remoulade
 Ingredients
- 3/4 cup chopped celery
- 3/4 cup chopped scallions (white & green parts)
- 1/2 cup chopped parsley
- 1 cup chopped yellow onion
- 1/2 cup ketchup
- 1/2 cup tomato puree
- 1/2 cup Creole mustard or any coarse, grainy brown mustard
- 2 TB prepared horseradish, or to taste
- 1/4 cup red wine vinegar
- 2 TB Spanish hot paprika
- 1 tsp Worcestershire sauce
- 1/2 cup salad oil
- 36 to 48 jumbo (15 count) shrimp, peeled, lightly boiled and chilled
1 small head of iceberg lettuce, washed, dried and cut into thin ribbons
PREPARATION:
1. A day before serving, finely chop in a food processor the celery, scallions, parsley and onions. Add the ketchup, tomato puree, Creole mustard, horseradish, vinegar, paprika and Worcestershire. While processing, add the oil in a slow drizzle to emulsify. Stop when the dressing is smooth.
2. Chill for 6 to 8 hours or overnight. Correct the seasoning if needed after the ingredients have melded.
3. In a large mixing bowl, add the sauce to the shrimp and toss gently to coat. Divide the lettuce among 6 to 8 chilled salad plates. Divide the shrimp evenly atop the lettuce. Serves 6 to 8. |
